Roasted Balsamic Mushrooms with Rosemary and Thyme

Perfect recipe for a side dish or a zesty snack. Oven roasted balsamic mushrooms with rosemary, garlic and thyme.

  • 500 g mushrooms, washed
  • 2 tablespoons extra-virgin olive oil
  • 2 tablespoons balsamic vinegar
  • 2 garlic cloves, minced
  • 1 teaspoon rosemary
  • 1 teaspoon thyme
  • salt and pepper, to taste


  1. Preheat oven to 180°C and line a baking tray with foil. In a mixing bowl combine oil, balsamic vinegar, garlic, herbs and season to taste. Add in mushrooms and toss until well coated.
  2. Arrange the mushrooms on the prepared baking tray and bake for 15 minutes or until crispy and golden brown. Serve warm as a side dish and enjoy!
