Get the whole family together and enjoy this savoury spinach and ricotta puff pastry Christmas tree.

2 sheets puff pastry, thawed
150 grams firm ricotta cheese
2 cups baby spinach
1/2 teaspoon dry basil
1/2 teaspoon oregano
salt and pepper, to taste
1 tablespoon melted dairy-free butter
Preheat oven to 180°C and line a baking tray with parchment paper. Place ricotta, spinach and spices into a blender and pulse until just combined. Set aside.
Place one puff pastry sheet on the prepared baking tray. Spread ricotta filing over the pastry in a tree shape. Top with the second puff pastry sheet. Using a sharp knife cut out the Christmas tree shape in the puff pastry. Use the left over pastry to make some other Christmas shapes if you like. Starting at the bottom of the tree cut the pastry into strips, about 2 cm wide, leaving a 1 cm tree trunk in the middle. Twist each strip twice. Brush the tree with melted butter. Bake for 15-20 minutes until golden brown. Enjoy!
