Sweet Potato and Broccoli Veggie Sausage Rolls

Join my veggie sausage roll party. These sausage rolls made with mashed sweet potato and steamed broccoli. A healthy recipe and kids lunch box friendly snack.

Ingredients

  • 2 sheets puff pastry, thawed
  • 2 medium sweet potatoes, cooked and peeled
  • 1 medium head of broccoli, cut into florets
  • handful fresh basil leaves, chopped
  • 1 teaspoon oregano
  • salt and pepper, to taste
  • 1/4 cup melted butter (use dairy-free if vegan)
  • 2 tablespoons hemp seeds

Method

  1. Steam broccoli, drain and let cool. In a medium bowl mash cooked sweet potatoes. Place cooked broccoli into a food processor and pulse a few times or you can chop them instead. Add broccoli into the bowl with mashed potatoes. Add in basil, oregano and season to taste. Mix until combined.
  2. Lay out 2 sheets of puff pastry, cutting each in half lengthwise. Add the sweet potato mixture along the long edge and roll the pastry over to seal. Cut into 6 small rolls. Repeat with the remaining pastry. Brush each roll with melted butter and sprinkle with hemp seeds. Bake for 20-25 minutes or until golden brown. Enjoy!
