Tofu and Spinach Toasties

Cheesy toasties with tofu and spinach will make a perfect snack or lunch meal when you’re after a quick and healthy bite.

  • 3 cups baby spinach
  • 1 tablespoon olive oil
  • 200 g silky tofu, drained and grated (or firm ricotta if you consume dairy)
  • 8 slices of dairy-free cheese or regular cheese slices
  • 4 slices of bread (I used whole meal rye bread)
  • 1 tablespoon dairy-free butter or regular butter


  1. Heat olive oil in a frying pan and add spinach, cook for 5 minutes or until all the liquid has been evaporated. Add in grated tofu/ricotta and cook for another 5 minutes, set aside to cool down slightly.
  2. Arrange toasties. Place one cheese slice on a bread top with a tablespoon of tofu spinach mixture and another bread slice. Repeat with the remaining bread slices and the tofu mixture.
  3. Melt butter in a frying pan over medium heat and fry toasties on both sides until crispy and golden brown. Enjoy right away!
