Vegan Crispy Oven Baked Cauliflower Arancini

Yummy and comforting vegan cauliflower arancini are a quick and easy dinner party appetiser. Best enjoyed with a tomato sauce.

Ingredients

  • 1 tablespoon chia seeds
  • 3 tablespoons water
  • 1 head cauliflower, cut into florets
  • 1 tablespoon olive oil
  • 2 garlic cloves, minced
  • 1 teaspoon dry rosemary
  • 1 teaspoon ground oregano
  • salt and pepper, to taste
  • 1 cup grated dairy-free cheese
  • handful fresh basil leaves
  • 1 1/2 cups breadcrumbs
  • 1/2 cup flour
  • 1 cup soy milk

Method

  1. Mix the chia seeds and water together in a small bowl and let it sit for 10 - 15 minutes until the mixture becomes gel. Place cauliflower florets into a blender or food processor and pulse until it resembles rice.
  2. In a frying pan heat oil over medium heat add garlic and cook for 30 seconds. Add cauliflower rice, spices and season to taste. Cook for about 5 minutes. Let the cauliflower mixture cool slightly and place back into a blender or food processor. Add in chia seed mixture, cheese and basil, process until the mixture comes together and sticking, transfer to the freezer for 15 minutes.
  3. Take out from the freezer and shape tablespoonfuls of mixture into balls. Whisk together flour and soy milk. Dip each ball into flour milk and then breadcrumbs. Deep fry or arrange on the baking tray lined with parchment paper and bake for 25-30 minutes at 180°C until golden brown. Serve warm with tomato sauce.
