Vegan Puff Pastry Pizza Pinwheels

Use my super easy recipe to make your own vegan puff pastry dough and you will never have to buy it from the store.

Prep Time: 30 mins
Cook Time: 2 hrs
Makes : 2 sheets

  • For the Puff Pastry Dough:
  • 1/2 cup water
  • 1/2 cup olive oil
  • 2 cups all-purpose flour
  • pinch of salt
  • For the Pizza Pinwheels:
  • pizza toppings of your choice: tomatoes, mushrooms, olives, baby spinach etc

  1. In a large mixing bowl combine water and oil. Sift in flour with salt and bring everything together to a rough dough. Knead the dough on a floured surface for about a minute, and leave it to rest for 30 minutes. Roll out the dough on a lightly floured board into rectangle until it’s about 1cm thick. Fold into thirds, then rotate the dough 90 degrees and repeat rolling. Roll out and fold the pastry again, repeating this four times in all to make a smooth dough. Wrap the dough in plastic wrap, and chill for 2 hours.
  2. Make the pizza pinwheels. Preheat the oven to 180°C. Line a baking tray with parchment paper. Working on a floured surface, roll out one sheet of the puff pastry. Top with the toppings of your choice. Starting at one of the short ends, roll the pastry up as tightly as possible. Slice into 2cm pieces and place on the baking sheet. Repeat with the remaining sheet of the puff pastry. Bake for 12-15 minutes until puffed and golden. Serve warm and enjoy.
