Veggie “Sushi” Wrap

Ingredients

  • 5 tortilla wraps
  • 1/2 -1 cup hummus
  • 2 carrots, shredded
  • 1/4 white cabbage, shredded
  • 1/4 purple cabbage, shredded
  • 2 cups baby spinach

Method

  1. Spread about 1 tablespoon of hummus on each wrap, add the veggies and roll up firmly. Cut each roll into sushi pieces and serve immediately.
