Zucchini Carrot Fritters

Carrot and Zucchini Fritters a perfect lunch or snack anytime of the day

  • 1 zucchini, grated
  • 1 carrot, grated
  • 1 shallot, finely chopped
  • ½ cup all-purpose flour
  • ½ teaspoon baking powder
  • 1 flax-seed egg or normal egg
  • salt and pepper, to taste


  1. Wrap zucchini in a kitchen towel and gently squeeze over a bowl to remove as much liquid as possible.
  2. In a large mixing bowl combine zucchini, carrots, shallot, flour, baking powder, egg, salt and freshly ground black pepper and mix well.
  3. Heat vegetable oil in a large skillet over medium heat. Drop about 1 tablespoon of the mixture into the pan, slightly flatten into fritter shape. Fry 3 minutes on each side until golden. Repeat until the mixture is all used up.
  4. Serve warm or cold with hummus. Enjoy!
