Choc Cranberry Nut and Seed Bars

If you are not a fan of baking this no-bake delicious sweet treat is just right for you. Quick and easy chocolate bars packed with cranberries, seeds and nuts. Ready in no time.

Ingredients

  • For the Filling:
  • 1 cup rolled oats
  • cup chopped pecans
  • 1/3 cup pumpkin seeds
  • /3 cup hemp seeds
  • 1/3 cup dry cranberries
  • 1/3 cup desiccated coconut
  • For the Chocolate Coating:
  • 200 g chocolate bar (I used vegan milk chocolate)
  • 1/3 cup melted coconut oil
  • additional seeds, for decorating

Method

  1. Combine all the filling ingredients in a mixing bowl. Line a baking tin loaf with parchment paper.
  2. Transfer the seed nut mixture into the prepared baking tin. Melt chocolate and coconut oil together. Pour the chocolate over the seed nut mixture and stir through until the filling is evenly coated.
  3. Sprinkle a few seeds on top and refrigerate for 30 mins. Slice and enjoy!
