Coconut Banana Bread Donuts

So soft and crumbly, these coconut banana bread donuts glazed with Biscoff spread and pistachios will melt in your mouth and melt your heart.

  • 1 ripe banana
  • 1/2 cup raw brown sugar
  • 3/4 cup melted coconut oil
  • 1 teaspoon vanilla bean paste
  • 1 1/2 cups wholemeal flour
  • 1 teaspoon all spice
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 tablespoon apple cider vinegar
  • 1/2 cup shredded coconut
  • 3/4 cup melted Biscoff spread
  • 1/2 cup chopped pistachios


  1. Preheat oven to 180°C and grease a muffin pan. In a mixing bowl mash banana and sugar together. Add in coconut oil and vanilla, mix until well combined. Add in flour, spices and baking powder, mix until just combined.
  2. In a small bowl combine baking soda and apple cider vinegar together, then stir the mixture into the butter. Add in shredded coconut and mix until combined. Pipe or spoon into each donut mold.
  3. Bake for 15-20 minutes until golden brown and a tooth pick inserted in the centre comes out clean. Allow 5 minutes to cool in the pan before removing. Cool completely on a rack.
  4. Dip the top of each donut into the melted Biscoff spread to coat and sprinkle with chopped pistachios.
