3/4 cup all-purpose flour
100 grams butter
pinch of salt
pinch of sugar
In a large sauce pan bring 1 cup of water to a boil and add salt, sugar and butter. Stir until the butter dissolved. Sift in the flour.
Beat well, over the heat, until the mix turns smooth and starts to come away from the edge of the pan. Let cool slightly and start adding the eggs, one egg at a time, using an electric mixer.
Preheat oven to 220C and line 2 baking trays with baking paper. Fill piping bag with the mixture and pipe 1 1/2- inch rounds of paste onto the prepared trays, leaving at least an inch between each.
Bake 1 tray of profiteroles for 10 minutes and reduce heat to 180C. Bake for 10 to 12 minutes or until golden and puffed. Cool on tray. Increase temperature to 220C. Repeat with remaining tray.
