Easy Vegan Banana Muffins

  • 350 grams all-purpose flour
  • 1/2 cup (100 grams) raw brown sugar
  • 2 teaspoons baking powder
  • pinch of salt
  • 300 ml soy milk
  • 115 grams dairy-free butter, melted
  • 2 bananas, mashed
  • 2 tablespoons chia seeds
  • 2 tablespoons water


  1. Preheat oven to 180°C. Lightly grease a non-stick muffin pan.
  2. In a medium bowl combine flour, sugar, baking powder and salt. In a separate bowl using hand mixer beat milk, melted butter, mashed bananas, chia seeds and water. Add in dry ingredients. Let the batter sit for 10 minutes.
  3. Fill muffin tins ¾ full with the mixture. Bake for 20-25 minutes or until muffins spring back when lightly tapped. Enjoy!
