2 cups all-purpose flour, sifted
1 teaspoon baking powder
1 teaspoon baking soda
1/2 cup organic cacao powder
pinch of salt
1/2 cup olive oil
1/2 cup raw brown sugar
2 eggs (use chia seed mixture, if vegan)
1 teaspoon vanilla bean paste
1 tablespoon apple cider vinegar
2 small zucchinis, grated (about 2 cups)
Preheat oven to 180°C and line an 8x8 square baking dish with parchment paper. In a medium bowl combine flour, baking powder, baking soda, cacao and salt. Set aside.
In a separate bowl using hand electric mixer beat oil and sugar together. Beat in eggs, one at a time. Beat in vanilla and apple cider vinegar. Add in zucchini and mix well. Add in dry ingredients and mix until just combined.
Spoon the batter into the prepared baking dish and smooth the top. Bake for 25-30 minutes or until a toothpick comes out clean. Serve drizzled with melted chocolate and pistachio butter. Enjoy!
