Enjoy these no-bake healthy nut bars. They’re vegan, packed with protein and so delicious!

Ingredients
1/2 cup raw almonds
1 cup cashew nuts
1/2 cup peanuts
1/2 cup rolled oats
1/2 cup goji berries
1 teaspoon chia seeds
1 cup pitted dates
1/2 cup almond spread
1/2 cup peanut butter
2 tablespoons maple syrup
2 tablespoons melted coconut oil
200 grams dairy-free chocolate bar, chopped
almond flakes and more goji berries, for decorating
Method
Place all the ingredients expect for coconut oil and chocolate into a food processor and pulse until the mixture comes together and resembles thick paste, you can add one or two tablespoons of melted coconut oil, if needed. Transfer the mixture into a square baking tin lined with parchment paper pressing firmly over the base.
Melt chocolate with coconut oil and poor over the base. Sprinkle with goji berries and almond flakes. Chill for about 15 minutes or until set. Serve and enjoy.
