Red Currant Vegan Muffins

  • 2 cups all-purpose flour
  • 1 cup raw brown sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2 cup vegan butter
  • 1/2 cup almond milk
  • 1 mashed banana
  • 1 teaspoon vanilla extract
  • 1 cup red currants


  1. Preheat the oven to 180°C and line the muffin tins.
  2. In a medium bowl, whisk flour, sugar, baking powder and salt together.
  3. In a small bowl whisk melted butter, milk, mashed banana and extract together.
  4. Pour over the dry ingredients and mix just to combine. Fold in currants.
  5. Fill the muffin pan with batter such that each cup is about 3/4th full. Be careful not to over-fill.
  6. Bake for about 20 – 25 minutes or until golden brown and toothpick inserted into the center comes out clean. Let it cool, decorate with more currants and enjoy.
