Vegan Flourless Lazy Muffins

Not a fan of flour baking goodies? Not a problem, try these flourless sweet and soft muffins made with banana, oats and dates.

Ingredients

  • 2 mashed bananas
  • 2 cups rolled oats
  • 1 cup desiccated coconut
  • 1/2 cup mixed chopped nuts
  • 1/3 cup cacao powder
  • 1/2 cup maple syrup
  • 1/4 cup extra-virgin olive oil
  • 1 cup chopped dates
  • 1/4 cup cacao nibs

Method

  1. Preheat oven to 180°C and grease a muffin tin. Add all the ingredients together in a mixing bowl and stir until well combined. Spoon the mixture into the prepared muffin tin and sprinkle with cacao nibs on top.
  2. Bake for 20 minutes or until golden. Remove from the oven and let cool in the tin for 10 minutes. Enjoy!
