Vegan Matcha Banana Bread

Super soft and moist vegan banana bread made with hemp seeds and matcha powder. Simple recipe comes in handy when you’re looking for something easy to make for breakfast or dessert.

Ingredients

  • 2 ripe bananas, mashed
  • 1/2 cup raw brown sugar
  • 3/4 cup melted coconut oil
  • 1 teaspoon vanilla bean paste
  • 1/2 cup all-purpose plain flour
  • 1/2 cup whole-meal flour
  • 1 teaspoon cinnamon
  • 1 teaspoon all spice
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 tablespoon apple cider vinegar
  • 1/4 cup hemp seeds
  • 2 tablespoons matcha powder
  • 1/2 cup blueberries

Method

  1. Preheat oven to 180°C and grease a loaf pan.
  2. In a bowl mix together mashed bananas and sugar. Mix in oil and vanilla bean paste. Mix in both flour and spices. Add in baking powder, baking soda and apple cider vinegar, mix until well combined. Mix in hemp seeds and matcha powder. Arrange blueberries on top.
  3. Spoon the batter into the prepared baking loaf pan and bake for 45 minutes or until a toothpick inserted into the centre comes out clean. Remove from the pan and let cool on a wire rack for 15 minutes. Slice and enjoy!
