Vegan Strawberry Banana Bread

What can be better than homemade banana bread? Strawberry homemade banana bread! It`s perfectly moist and makes a great breakfast on the go.

Ingredients

  • 1 tablespoon chia seeds
  • 3 tablespoons water
  • 1/2 cup raw brown sugar
  • 1/2 cup olive oil
  • 1 large ripe banana, mashed
  • 1/2 cup non-dairy yogurt
  • 1 teaspoon vanilla bean paste
  • 2 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon lemon juice
  • 1 cup sliced strawberries

Method

  1. Preheat oven to 180°C, grease and flour a baking tin. Mix chia seeds and water together in a small bowl and let it sit for 10-15 minutes until the mixture becomes gel.
  2. In a bowl, using an electric mixer, beat sugar and oil together. Add chia seed mixture, mashed banana, yogurt and vanilla, mix to combine.
  3. In a separate bowl combine flour, salt, baking powder and baking soda. Stir the dry ingredients into the wet ingredients. Add in lemon juice and strawberries, stir to combine.
  4. Pour batter into the prepared tin. Bake for 45 to 60 minutes until golden brown and tooth pick inserted in center comes out clean. Enjoy!
